Cappadocia

Cappadocia is a volcanic landscape of soft rock sculpted into cones, pillars and canyons, honeycombed with cave dwellings and rock-cut churches painted with Byzantine frescoes. Watching the hot-air balloons drift over the valleys at sunrise – or flying in one – is the defining experience.
Göreme is the center, with balloon views and the Open-Air Museum. Uçhisar, crowned by its rock castle, is quieter and more upscale. Ürgüp is a handsome town with restored mansions and wineries.
Balloon flights depend on the weather, so allow two or three mornings. The valleys are best hiked in spring and autumn; winters are cold and often snowy.
